We got some great recipes from last week’s show. Here’s Nancy’s recipe for Blueberry Cheesecake Bars. Be sure to tune in tomorrow night after the 6 o’clock news for more recipes.
Blueberry Cheesecake Bars (Nancy Sheehan)
Ingredients
¾ cups of graham cracker crumbs 3 eggs, lightly beaten
3 tbsp of melted butter 1 cup of sour cream
½ tsp of cinnamon 1 tsp of vanilla
¼ tsp of nutmeg (2) 8 oz. packages of cream cheese
2 cups of blueberries ½ cup of sugar

Directions
- Pre-heat oven to 325 degrees
- Coat pan with coking spray
- In a small bowl combine; crumbs, butter, cinnamon and nutmeg
- Press crumb mixture in pan and up sides of pan to ¼ inch
- Toss blueberries with flour, then set aside
- Combine eggs, sour cream and vanilla; set this mixture aside
- In a separate bowl, beat the cream cheese until smooth (2-3 min.)
- Beat sugar into cheese mixture 2 tbs at a time
- Slowly blend in egg mixture and stir in blueberries
Bake about 1 hour until center is set. Cool 30 minutes on rack
Refrigerate 3 hours, or overnight
