Chocolate Cake Mix Cookies – Sheila from Rockland

Heat over to 350 degrees. Coat baking sheet with cooking spray. In bowl combine 1 box devil’s food mix (or your favorite cake mix), 1 (8 ounce) container whipped topping and 1 egg until well blended. Roll dough into 1 inch balls (wet hands as dough will be sticky).  Place balls on prepared baking sheet.  Bake 10 to 12 minutes or until done.

Italian Christmas Cookies – Sheila from Pembroke:

4 eggs
1 cup sugar
½ cup butter
2 tsp vanilla
3 ½ cup flour
4 tsp baking powder

Sift dry ingredients. Cream butter and sugar. Beat in egg. Add vanilla and dry ingredients.
Knead and add flour as needed to keep dough from sticking to hands. Pinch off dough. Roll in your hands to form a log and then twirl into shape. Place on greased cookie sheet. Bake at 375 degrees for 10 minutes.

ICING:
2 cups sifted confectioners sugar
2 tsp vanilla
6 tsp water
Stir until creamy

Dip cookies into icing and sprinkle with trim. Place on wire rack with wax paper on counter to collect the dripping icing and sprinkles

Butter Toffee Cookies – Bill from Pembroke

Ingredients:

1 cup sugar
3/4 cup Butter, softened
1 Egg
1 teaspoon vanilla
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 cup English or almond toffee bits
Also may add 1/2 cup mini chocolate chips

Directions:

Heat oven to 350°F.

Combine sugar, butter, egg and vanilla in bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour, baking powder and baking soda; beat at low speed until well mixed. Stir in toffee bits.

Shape dough into 1-inch balls. Roll in sugar. Place 2 inches apart onto ungreased cookie sheet. Flatten to 1 1/2-inch circles using bottom of glass. If glass sticks, dip glass in sugar.   – Cookies may also be flattened with a fork in a criss-cross pattern.

Bake 9-11 minutes or until edges are just lightly browned. Do not over bake. Sprinkle with sugar while warm. Cool completely.

Oatmeal Cookies – Sheila from Hanson

 HEAT OVER TO 350 DEGREES.
COAT BAKING SHEET WITH SPRAY.
IN BOWL MASH 2 VERY RIPE BANANAS. STIR IN 1 CUP UNCOOKED QUICK COOKING OATS. FOLD IN 1/4 CUP CHOPPED NUTS, CHOCOLATE CHIPS, COCONUT, RAISINS OR ANY OTHER DESIRED ADD-IN.  SPOON TABLESPOONS ONTO PREPARED BAKING SHEET.  BAKE 15 MINUTES OR UNTIL LIGHTLY BROWN.

Three Ingredient Peanut Butter Cookies- CariLynne from Rockland

I cup peanut butter
1 cup white sugar
1 egg
Preheat over to 350 degrees. Line cookie sheets with parchment paper.
Combine all ingredients and mix well
Drop spoonfuls of dough onto cookie sheet.  Bake at 350 degrees for 6 to 8 minutes.  DO NOT OVERBAKE.
 No Bake Cookies – Hazel from Hanson

1 stick butter
2 cups sugar
1/2 cup cocoa
1/2 cup milk
1/4 tsp salt
3 cups oatmeal
1/2 cup peanut butter
1 tsp vanilla
Bring first 5 ingredients to hard boil for about 1 minute stirring constantly. Then add last 3 ingredients. Beat together and drop on wax paper . Let cool before removing.
